Puli Saadham is a traditionally South Indian Rice dish which is infused with tamarind. It is a sour rice which is traditionally an offering at prayers. It can be served with any vegetarian curry especially broad beans chutney, braised potatoes and braised spinach.
Ingredients
- 2 cups of any cooked rice ( I used the Az Zahra basmathi rice ) as this cooks to absolute perfection
- 1 cinnamon stick
- 1 black cardamom seed
- 1 onion cut according to your preference
- 5ml black mustard seeds
- 5ml Osmans tamarind concentrate/10g block tamarind
- A pinch of salt
- 60g Clover ghee
- 10 curry leaves
- 2 cloves
- 5 green chilies ( sliced)
Method
- Heat the ghee in a pot, add sliced onion, cloves , cardamom seeds, curry leaves, mustard seeds and cumin seeds. Saute for a few minutes.
- Add the green chilies and tamarind concentrate or tamarind mixed with 50ml water and strain into pan. Allow water ( if any) to evaporate
- Blend the cooked rice with the mixture in the pot.
- Steam for one minute before serving
