Ingredients
- 1 kg lamb
- 80 ml vegetable oil
- 1 onion, quartered and thinly sliced
- 2 sprigs of curry leaves
- 2 small pieces of cinnamon sticks
- 1 star anise
- 2 bay leaves
- 2 tsp ginger/garlic paste
- 3 tbsp Papas All in One Curry Paste
- 2 tbsp Kashmiri chili powder
- 2 tbsp tomato paste
- 4 potatoes, cut into medium-sized cubes
- 500 ml water
- 1 1/2 tsp salt (to taste)
- A few coriander leaves for garnishing (optional)
Instructions
- Heat oil in a pot over medium heat for a few minutes. Add cinnamon stick, star anise, and bay leaves. Fry for a few seconds until fragrant.
- Sauté the sliced onion and curry leaves until the onion slightly browns before adding ginger and garlic paste.
- Incorporate Papas All in One Curry Paste and Kashmiri chili powder, allowing them to fry for a few minutes. It is crucial for the spices to fry to enhance the flavor.
- Add lamb/chicken and mix well to fully coat the meat with spices. Keep the pot open on medium heat and allow the meat to fry for 5 minutes. This step allows the spices to flavor the meat.
- Add tomato paste and season with salt. Cover the pot and let it cook on medium heat until the sauce starts to thicken. Ensure the meat is fully cooked and tender.
- Add the chopped potatoes and water. Cover the pot and let it cook on low heat until the potatoes are soft, and a flavorful gravy has formed.
Serve best with rice or roti. Enjoy!
