Lamb Curry Recipe

🍛 Hearty Lamb Curry

Prep Time: 20 mins | Cook Time: 1 hour | Serves: 4–6

Warm, comforting, and deeply flavorful, this Lamb Curry is made using Papas All-in-One Curry Paste and Kashmiri chili powder for a rich, aromatic experience. Perfectly tender lamb and soft potatoes come together in a luscious gravy — best served with basmati rice or soft rotis.


📝 Ingredients:

  • 1 kg lamb (bone-in or boneless, cut into pieces)

  • 80 ml vegetable oil

  • 1 onion, quartered and thinly sliced

  • 2 sprigs curry leaves

  • 2 small pieces cinnamon stick

  • 1 star anise

  • 2 bay leaves

  • 2 tsp ginger & garlic paste

  • 3 tbsp Papas All-in-One Curry Paste

  • 2 tbsp Papas Kashmiri Chili Powder

  • 2 tbsp tomato paste

  • 4 potatoes, cut into medium cubes

  • 500 ml water

  • 1½ tsp salt (or to taste)

  • Fresh coriander, for garnish (optional)


👨‍🍳 Instructions:

  1. Heat oil in a large pot over medium heat.
    Add cinnamon, star anise, and bay leaves. Fry for a few seconds until fragrant.

  2. Add the sliced onions and curry leaves. Sauté until onions are lightly browned.

  3. Stir in the ginger & garlic paste and cook for 1 minute.

  4. Add Papas All-in-One Curry Paste and Kashmiri chili powder.
    Let it fry for 2–3 minutes to release its full flavour.

  5. Add the lamb pieces and coat well in the spice mixture.
    Cook uncovered on medium heat for about 5 minutes, stirring occasionally.

  6. Stir in the tomato paste and season with salt.
    Cover and cook on medium heat until the lamb is tender and the sauce begins to thicken (about 25–30 minutes).

  7. Add the potatoes and water. Stir well.
    Cover and simmer on low heat until the potatoes are soft and a rich gravy has formed (around 20–25 minutes).

  8. Garnish with fresh coriander (optional) and serve hot.


🍽️ Best Served With:

  • Steamed basmati rice

  • Hot, buttered rotis

  • Fresh sambals or pickles on the side


🔥 Cook’s Tip:

For extra depth of flavour, marinate the lamb in 1 tablespoon of the curry paste and a pinch of salt for 30 minutes before cooking.
