🥘 Vegetarian Pilau

3 tbsp @papasspicecafe Ghee

1 @papasspicecafe Cinnamon Stick

1 tbsp @papasspicecafe Crushed Garlic

1 tbsp @papasspicecafe Vadivoh

1 chopped onion

2 fresh green chillies, sliced

1 green pepper, chopped

½ tray mushrooms, chopped

1 cup frozen peas
-
1 tsp @papasspicecafe Jeera Powder

1 tsp @papasspicecafe Turmeric Powder

1 tsp @papasspicecafe Garam Masala

250g soya prawns (prepared in air fryer)

Pre-cooked basmati rice (leftovers work best)

Pinch of yellow food colouring

2 potatoes (air-fried until golden)
👩🍳 Method

In a large pan, heat 2 tbsp ghee with crushed garlic and the cinnamon stick until fragrant.

Add vadivoh, chopped chillies, and onion, allowing the ghee to absorb their flavours.

Stir in the green pepper, mushrooms, and peas, and let the vegetables fry gently.

Season with Jeera Powder, Turmeric, and Garam Masala. Let the spices toast with the vegetables for 3–5 minutes.

Combine the cooked vegetable mix with your pre-cooked basmati rice. Sprinkle a pinch of food colouring over the top for that classic breyani look.

Gently fold in the air-fried potatoes and soya prawns, then drizzle the remaining 1 tbsp of ghee over everything.

Transfer to an oven-safe dish and bake at 180°C for 10–15 minutes to allow the flavours to come together beautifully.
