My daughters anxiously await tea time with a good catch-up and a cup of warm tea.
Today I decided to experiment in the kitchen and endulge in an old-fashioned loaf.
I remember coming home after school to the smell of freshly baked bread that my mother used to make. I wanted my daughters to experience the love and warmth associated with a home-made bread.
My simple gingerbread loaf:
Ingredients:
1/2 cup oil
2 eggs
1/2 cup maple syrup
1/2 tsp baking powder
Pinch of salt
1/2 tsp bicarbonate of soda dissolved in 30ml lukewarm water
1 1/2 cups cake flour
1/2 tsp @papasspicecafe ground ginger
1 tsp @papasspicecafe ground cinnamon
1/2 cup sugar
1/2 cup lukewarm water
Method:
•Preheat the oven to 180 degrees Celsius and grease a loaf tin of your preference.
•Beat together the eggs, oil, water and syrup and add in the dissolved bicarbonate of soda.
•Sieve in all the dry ingredients including the sugar and beat for 5 min.
•Pout the batter into the greased tin.
•Bake for 40-45 minutes.
•Cool slightly in the tin before removing.
Best served with butter and a warm cup of tea.
Recipe makes one gingerbread loaf.
