🍞 Old-Fashioned Gingerbread Loaf

Tea time in our home is more than just a warm cup — it’s a moment of connection, laughter, and comfort. My daughters eagerly await this little ritual, and today, I decided to surprise them with something close to my heart: a simple, old-fashioned gingerbread loaf, just like the one my mother used to bake.
I still remember coming home from school to the aroma of freshly baked bread wafting through the house — it felt like a warm hug from Mom. I wanted to pass on that same love and nostalgia to my girls through this humble, heartwarming bake.
📝 Ingredients:

½ cup oil

2 eggs

½ cup maple syrup

½ tsp baking powder
-
Pinch of salt

½ tsp bicarbonate of soda (dissolved in 30ml lukewarm water)

1½ cups cake flour
-
½ tsp @papasspicecafe Ground Ginger

1 tsp @papasspicecafe Ground Cinnamon

½ cup sugar
-
½ cup lukewarm water
👩🍳 Method:

Preheat your oven to 180°C and grease a loaf tin of your choice.

In a mixing bowl, whisk together the oil, eggs, maple syrup, lukewarm water, and the dissolved bicarbonate of soda.

Sift in all the dry ingredients, including the sugar, and beat the mixture for about 5 minutes until smooth and well combined.

Pour the batter into the greased loaf tin.

Bake for 40–45 minutes or until a toothpick inserted into the center comes out clean.

Allow the loaf to cool slightly in the tin before turning it out.

Best enjoyed warm with a spread of butter and a comforting cup of tea.
